Salsify

Tragopogon porrifolius

An old-fashioned root grown for its faintly oyster-like flavor, taking most of a growing season to swell into a long, tapering, carrot-shaped root. Deep, stone-free soil matters far more than fussing over the leafy top growth. The one rule: never transplant it β€” any check to the taproot makes the root fork.
